Cheese Triangles

Tomorrow is a big day for all of us football fans out there – it’s the Super Bowl! Even if you’re not a fan of the Super Bowl for football, there’s always the commercials and the food to look forward to! And lucky for you, I have the perfect appetizer for you to add to your Super Bowl food lineup!

These cheese triangles have been a fan-favorite in my house for as long as I can remember, and we always whipped up a batch of them for neighborhood get-togethers, parties, or family gatherings. Growing up, anytime my parents told me that we were planning on having guests over to our house, I would always suggest that my mom made these cheese triangles…mainly because I wanted them and I knew there would always be a few leftover for me to eat 🙂 What can I say? They’re just that good!

We don’t make these nearly as often as we did years ago, but every now and again we’ll make a batch for my mom to take to work, or to bring to family get-togethers. They take just a few minutes to mix up, and they’re made with just a few simple ingredients you’re likely to have on-hand! And it just so happens that they’re perfect to snack on during Super Bowl!

Now I will say this: this recipe isn’t “healthified” or “clean” (although I HATE that word in regards to food) or anything like that. It’s just a classic feel-good recipe made with lots of cheese and cream cheese, and guess what? There’s nothing wrong with that! Life is too short to miss out on all the delicious foods out there just because they’re “unhealthy”.

Contrary to the popular saying, food is so much more than just fuel. Food is all about the memories certain meals bring up, the taste, and sharing time with loved ones, to name a few. And for me, these cheese triangles bring me right back to my childhood, and that puts a huge smile on my face. So am I going to stress about how this isn’t exactly the healthiest meal? Or go run until my legs fall off tomorrow to “start fresh”? HECK NO. I’m going to savor the taste and enjoy the moment I’m in while eating these tomorrow night. And I hope that you can do the same!

To make these, it’s really quite simple: all you have to do is combine your ingredients in a food processor until nice and creamy, spread it on the tortilla, top with another tortilla, and cut into triangles. Easy peezy, lemon squeezy! Although I will say this – make sure you spread the cheese layer on the tortilla nice and thick! No one likes biting into a tortilla sandwich with almost no filling, am I right?

I’ve always made this recipe using plain cream cheese, but there’s always room for creativity! I recently had a tub of Melanie’s Medleys Horseradish & Cheddar flavored cream cheese on hand, so I made this recipe using that flavor of cream cheese, and guess what? It was amazing! But if flavored cream cheese isn’t your thing, plain is always a great option!!

Now on a more serious note… who will you be cheering for in tomorrow’s big game? I’ve always been a die-hard Steelers and Patriots fan, and it just so happens that one of those teams is playing tomorrow! So can you guess who I’ll be cheering for?

Cheese Triangles

Ingredients
  

  • 10 ounces cream cheese softened
  • 8 ounces shredded cheese* about 2 cups
  • 2 packages (1-ounce each) taco seasoning
  • 1 (4-ounce) can green chilies undrained
  • 3-4 TBSP green onions finely chopped, optional
  • 8-10 taco-sized flour tortillas

Instructions
 

  • Combine the cream cheese, shredded cheese, chilies (undrained), and taco seasoning in a large food processor. Pulse until smooth and creamy, stopping to scrape down the sides a few times. 
  • Remove the blade and use a rubber spatula to fold in the green onions, if using. 
  • Spread a generous layer of filling on top of a flour tortilla, spreading the mixture all the way to the ends of the tortilla. Place another tortilla on top to form a sandwich. 
  • Use a pizza cutter (or a large knife) to slice each tortilla sandwich into triangles. 

Notes

*You can use really any type of shredded cheese – colby, cheddar, colby Jack, Mexican blend, etc.
