Banana Bread Bites

Serves: 18 bites
Ingredients
  • 15 dates, soaked in hot water for 10 minutes
  • 1 ripe banana
  • 1½ cups raw, unsalted almonds
  • 1 TBSP honey or maple syrup
  • ¼ cup rolled oats
  • 2-3 TBSP flaxeed meal*
  • 3-4 TBSP coconut flour **
  • 1 TBSP cacao powder
Instructions
  1. Soak dates in a bowl of hot water for about 10 minutes prior to beginning.
  2. Add the almonds to a food processor and pulse until mixture resembles fine crumbs. (Do not blend too long, or else it will start to turn into almond butter!)
  3. Add the dates and blend until they are mixed in with the almonds. (May need to stop and scrape down the side of the bowl a few times).
  4. Add banana, honey, cocoa powder, oats, flaxseed meal (starting with 2 TBSP) and coconut flour (starting with 3 TBSP).
  5. Continue to blend until all ingredients are well-incorporated. If mixture seems too wet and sticky, add a bit more flaxseed meal or coconut flour until desired texture is reached.
  6. Place mixture in the fridge for 5-10 minutes to chill, then use a cookie scooper to scoop out dough balls.
  7. Place dough balls in a container, seal, and keep in the refrigerator.
