Almond Cherry Bars

Ingredients
  • ½ cup coconut oil, melted
  • ⅔ cup coconut sugar
  • 1 egg
  • 1 egg white
  • 2 TBSP almond milk
  • 1 tsp. almond extract
  • ½ tsp. vanilla extract
  • ½ tsp. baking soda
  • 2½ cups almond flour
  • ~1/4 cup coconut flour
  • ½ cup slivered almonds
  • 1 cup chopped cherries (I used frozen ones that had defrosted slightly)
Instructions
  1. Preheat oven to 375 F. Grease an 8x8" baking dish and set aside.
  2. Melt the coconut oil and add the coconut sugar. Mix well.
  3. When mixture is slightly cooled, add the egg, egg white, almond milk, almond extract, and vanilla extract.
  4. Add the dry ingredients, and then fold in the cherries and almonds.
  5. Pour batter into prepared baking dish.
  6. Bake for 20-25 minutes, or until tops are browned and a toothpick inserted into the center comes out clean.
