Chocolate Peanut Butter Fudge

Ingredients
  • ⅔ cup nut butter
  • ¼ cup melted coconut oil
  • ½ tsp. vanilla extract
  • ½ tsp. almond extract
  • 1 cup powdered sugar
  • About 2 tbsp. unsweetened almond or cashew milk
  • 1½ cups chocolate chips or chocolate bark
  • 2 tbsp nut butter.
Instructions
  1. Line a 9x9" baking dish with a layer of wax paper or parchment paper. Lightly spray with non-stick cooking spray.
  2. Melt the ⅔ cup nut butter with coconut oil. Stir in the vanilla, almond extract, and powdered sugar.
  3. Slowly add the milk and stir until mixture reaches desired consistency.
  4. In a microwave-safe bowl, or in a double boiler over the stove, melt the chocolate and nut butter.
  5. Once chocolate is melted, stir mixture into the peanut butter/powdered sugar mixture from above.
  6. Pour mixture into parchment-lined baking dish and place in the freezer for 45-50 minutes, or until set.
  7. Once set, remove from freezer, bring to room temperature, and cut into bars.
  8. Store in the refrigerator
