Black Bean Brownies

Serves: 16 brownies
Ingredients
  • 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
  • ½ cup old-fashioned oats
  • ½ cup unsweetened applesauce
  • ⅓ cup natural nut butter (I used almond butter)
  • ⅓ cup + 2 TBSP cocoa powder
  • 1 TBSP brown sugar
  • ¼ cup maple syrup
  • 1 tsp. vanilla extract
  • ½ tsp. almond extract
  • 1 tsp. instant espresso powder
  • 1 tsp. baking powder
  • ½ cup chocolate chips
Instructions
  1. Preheat oven to 350 degrees F. Grease an 8x8" baking dish with non-stick spray.
  2. Add all ingredients (except chocolate chips) to a food processor or high-speed blender and pulse until smooth and completely mixed.
  3. Fold in the chocolate chips and pour into prepared baking dish.
  4. Bake for 20-25 minutes, or until top is slightly browned and brownies appear set.
