Cinnamon Apple Baked Oatmeal

Ingredients
  • 3 large eggs
  • 1½ cups unsweetened almond milk (or milk of choice)
  • ¾ cup unsweetened applesauce (can also use mashed banana)
  • 3 TBSP pure maple syrup or honey
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground flax seed
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • 4 cups rolled oats
  • 2 apples, peeled, cored and diced
  • ΒΌ cup slivered almonds
  • Optional: ¼ cup dried cranberries
Instructions
  1. Preheat oven to 350 F and lightly coat the inside 9x13 casserole or baking pan. Set aside.
  2. In a large bowl, whisk together the eggs and milk until combined. Add applesauce (or banana), maple syrup, vanilla, cinnamon, and baking powder. Stir in oats, chia, flax, and apple chunks.
  3. Spread mixture into prepared pan.
  4. Bake for 35-40 minutes, or until the top is golden and the center is no longer jiggly.
