Lentil Sloppy Joe's

Ingredients
  • 1 cup dry lentils (brown or green)
  • 2 TBSP oil
  • 1 clove garlic
  • ½ of a large white onion, diced
  • 1 lb. ground turkey breast
  • 1 green bell pepper, diced
  • 1 (15-ounce) can tomato sauce
  • ¼ cup tomato paste
  • 3 TBSP apple cider vinegar
  • 1 TBSP Worcestershire sauce
  • 2 TBSP brown sugar
  • 2 tsp. Dijon mustard
  • ½ tsp. each: chili powder, cayenne pepper, cumin, garlic powder, salt, black pepper
  • ¼ tsp. crushed red pepper flakes
Instructions
  1. Add the lentils and 5 cups water to a medium saucepan. Bring to a boil, then reduce to low heat and simmer (covered) for 30 minutes, or until desired texture is reached.
  2. Add oil to a large skillet and add the diced onions. Sauté a few minutes until browned, and then add garlic. Sauté for another 1-2 minutes, and then add green peppers.
  3. Once peppers are sautéed, add the ground meat and cook until fully browned.
  4. Add the remaining ingredients, mix well, and then let simmer for 5-10 minutes or until the sauce has slightly thickened.
  5. Stir in the cooked lentils, cook for another 1-2 minutes, and then remove from heat.
