Moroccan-Spiced Lamb Meatballs

Serves: 18 meatballs
Ingredients
  • 1 lb. ground lamb
  • 2 TBSP fresh parsley, minced (or 2 tsp. dried)
  • 3 cloves garlic, minced
  • 2 tsp. red wine vinegar
  • 1 tsp. ground cumin
  • ½ tsp. each: ground coriander, all-spice, crushed red pepper flakes, ground cinnamon
  • ¼ tsp. each: ground ginger and salt
  • 1 egg
  • ¼ cup almond flour
Instructions
  1. Preheat oven to 400 F. Line a baking sheet with parchment paper and set aside.
  2. Combine all ingredients together and mix well.
  3. Use a 1” cookie scoop to scoop out mixture. Roll with your hands to form a ball.
  4. Heat 1 TBSP oil in a large skillet over medium heat and add the meatballs. Cook until browned, flip, and then continue to cook until each side is browned.
  5. Place the meatballs on the parchment-lined baking sheet and bake for 5-10 minutes.
