Avocado Chocolate Chip Cookies

Serves: 18 cookies
Ingredients
  • ½ cup mashed avocado
  • 2 TBSP unsweetened applesauce
  • 1 TBSP olive oil (or another TBSP applesauce)
  • ½ cup coconut sugar
  • 1 egg
  • 1 TBSP maple syrup
  • 1 cup cocoa powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • ½ tsp. instant coffee granules
  • Optional: ⅓ cup chocolate chips
Instructions
  1. Preheat oven to 350 F. Grease a cookie sheet or line with parchment paper.
  2. Combine all ingredients and mix well. Gently fold in the chocolate chips, if using.
  3. Use a cookie scooper to drop cookies onto baking sheet, spreading about 1 inch apart (I put about 12 cookies on one sheet).
  4. Bake for 10-12 minutes or until tops are set and bottoms are starting to brown.
  5. Remove from oven and let cool for 1 minute, then remove cookies and place on a cooling rack to cool completely.
