Avocado Chocolate Chip Cookies

Serves: 18 cookies
- ½ cup mashed avocado
- 2 TBSP unsweetened applesauce
- 1 TBSP olive oil (or another TBSP applesauce)
- ½ cup coconut sugar
- 1 egg
- 1 TBSP maple syrup
- 1 cup cocoa powder
- 1 tsp. baking soda
- 2 tsp. cinnamon
- ½ tsp. instant coffee granules
- Optional: ⅓ cup chocolate chips
- Preheat oven to 350 F. Grease a cookie sheet or line with parchment paper.
- Combine all ingredients and mix well. Gently fold in the chocolate chips, if using.
- Use a cookie scooper to drop cookies onto baking sheet, spreading about 1 inch apart (I put about 12 cookies on one sheet).
- Bake for 10-12 minutes or until tops are set and bottoms are starting to brown.
- Remove from oven and let cool for 1 minute, then remove cookies and place on a cooling rack to cool completely.
