No-Bake Chocolate Peanut Butter Cheesecake Dessert

Ingredients
  • CRUST:
  • 1½ cups graham cracker crumbs*
  • 8 TBSP (1 stick) unsalted butter, melted
  • 1 tsp. ground cinnamon
  • PEANUT BUTTER LAYER:
  • 1 (8-ounce) package cream cheese, room temperature
  • ⅔ cup creamy peanut butter
  • ⅓ cup powdered sugar
  • CHOCOLATE LAYER:
  • 1¼ cups chocolate chips
  • ¼ cup milk
  • ½ tsp. coffee extract (or vanilla extract)
  • ½ cup powdered sugar
  • 1 (8-ounce) package cream cheese, softened
Instructions
  1. Grease an 8x8” baking dish with non-stick cooking spray and set aside.
  2. Melt the butter and combine with the graham cracker crumbs until well-mixed.
  3. Press mixture into the bottom of the dish and place in the freezer.
  4. Peanut butter layer: beat the cream cheese, peanut butter, and powdered sugar until creamy.
  5. Remove pan from the freezer and evenly spread the peanut butter filling on top.
  6. Place the pan in the freezer while you make the next layer.
  7. Add the chocolate chips and milk to a microwave-safe bowl. Microwave in 30 second increments, stirring each time, until smooth and completely melted. Remove from the microwave and let cool.
  8. While it cools, combine the cream cheese, coffee (or vanilla) extract, and powdered sugar.
  9. Stir in the melted chocolate sauce and mix well. Spread over the top of the peanut butter layer and then place pan in the refrigerator to set. Let chill for at least 2 hours.
Notes
*I used 1 sleeve of graham crackers to make the crumbs (about 9 crackers)
