Cream Cheese Brownies

Ingredients
  • BROWNIES:
  • ½ cup (1 stick) butter, melted
  • ½ cup cocoa powder
  • ½ cup sugar
  • 2 eggs
  • ⅔ cup flour
  • ½ tsp. baking powder
  • CHEESECAKE FILLING:
  • 1 (8-oz.) package cream cheese, softened
  • ¼ cup sugar
  • 1 egg
  • 1 cup mini chocolate chips (optional)
Instructions
  1. Preheat oven to 350 degrees F. Grease an 8x8" baking dish with non-stick spray and set aside. Or, line a baking dish with foil (leaving enough overhang on the edges so you can lift it out) and then spray the foil with non-stick cooking spray.
  2. Filling: Combine cream cheese, sugar, and egg. Beat until smooth. Stir in the chocolate chips, if using, and then set mixture aside
  3. In a separate bowl, combine all the ingredients for the brownie mixture. Mix well, until no lumps remain.
  4. Pour half of the brownie mixture batter into the baking dish (enough to coat the bottom)
  5. Carefully spread cheesecake mixture over the brownie batter, and then top with the remaining brownie batter.
  6. Use a toothpick or a knife to swirl the top brownie layer into the cheesecake mixture (to make a marble pattern).
  7. Bake for 30-40 minutes, or until the top is crinkled and the center is set.
