Baked Apple Oatmeal Cups

Ingredients
  • 3 cups old-fashioned oats
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 tablespoon cinnamon
  • 1 cup unsweetened almond milk
  • 2 eggs
  • ½ cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • About 1 ½ cups peeled and diced apples (about two medium apples)
Instructions
  1. Preheat the oven to 350F. Grease a muffin tin with non-stick cooking spray. (Yields 14-15)
  2. In a medium bowl, combine the oats, brown sugar, baking powder, and cinnamon.
  3. In a large bowl, whisk the milk, eggs, unsweetened applesauce, and vanilla extract.
  4. Pour dry ingredients into wet ingredients and stir until thoroughly combined.
  5. Gently fold in diced apples. Spoon mixture into each muffin tin, filling almost to the top.
  6. Bake for 30-35 minutes, or until cups are set and golden brown.
  7. Remove from oven and let cool for 20-30 minutes in pan, then remove and let cool completely.
