Black Bean Burgers

Ingredients
  • 1 (15-ounce) can black beans, rinsed and drained
  • ½ of a red or orange bell pepper
  • ½ of a white onion
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • ⅔ cup almond flour (or bread crumbs)
  • 2 tsp. chili powder
  • 1 tsp. cumin
Instructions
  1. Preheat the oven to 375 degrees F. Spray a baking sheet with non-stick spray (or line with foil and then coat with oil).
  2. Add the peppers, onion, and garlic to a food processor and pulse well.
  3. Add the beans, egg, and spices and then continue to pulse until mixture is smooth. (A few small chunks will still remain - this is okay!)
  4. Remove the blade and stir in the almond meal (or bread crumbs).
  5. Form the mixture into patties and flatten slightly with your hands.
  6. Add about 2 TBSP olive to a medium skillet and turn the heat to medium-high. Add the patties, a few at a time, to the skillet and cook for about 3-4 minutes on each side, or until browned. Flip the patties and cook until the other side is browned.
  7. Transfer the burgers to the baking sheet and bake for 5-10 minutes.
  8. Alternately, you can cook the burgers entirely in the stove: skip the step where you brown the patties in a skillet and instead just place the bean burgers on a greased cookie sheet and place that sheet into the oven. Cook at 375 for 20-30 minutes (or until browned), flipping halfway through.
