Preheat the oven to 375 degrees F. Spray a baking sheet with non-stick spray (or line with foil and then coat with oil).
Add the peppers, onion, and garlic to a food processor and pulse well.
Add the beans, egg, and spices and then continue to pulse until mixture is smooth. (A few small chunks will still remain - this is okay!)
Remove the blade and stir in the almond meal (or bread crumbs).
Form the mixture into patties and flatten slightly with your hands.
Add about 2 TBSP olive to a medium skillet and turn the heat to medium-high. Add the patties, a few at a time, to the skillet and cook for about 3-4 minutes on each side, or until browned. Flip the patties and cook until the other side is browned.
Transfer the burgers to the baking sheet and bake for 5-10 minutes.
Alternately, you can cook the burgers entirely in the stove: skip the step where you brown the patties in a skillet and instead just place the bean burgers on a greased cookie sheet and place that sheet into the oven. Cook at 375 for 20-30 minutes (or until browned), flipping halfway through.
