Combine the cream cheese, shredded cheese, chilies (undrained), and taco seasoning in a large food processor. Pulse until smooth and creamy, stopping to scrape down the sides a few times.
Remove the blade and use a rubber spatula to fold in the green onions, if using.
Spread a generous layer of filling on top of a flour tortilla, spreading the mixture all the way to the ends of the tortilla. Place another tortilla on top to form a sandwich.
Use a pizza cutter (or a large knife) to slice each tortilla sandwich into triangles.
Notes
*You can use really any type of shredded cheese - colby, cheddar, colby Jack, Mexican blend, etc.
