One of my go-to breakfasts is oatmeal, whether it’s overnight oats, baked oats, or just regular old-fashioned oatmeal. There’s just something so comforting about it! When the weather starts changing and the mornings become chilly, I especially love a nice big bowl of warm, comforting oats. However, on the mornings when I’m rushed to get out the door, I don’t always have the time to prepare warm oats. So in that case, baked oatmeal always comes to my rescue!
This recipe takes less than five minute to throw together, making it such an easy way to make breakfasts ahead of time for the upcoming week. While it’s baking, you can do the laundry, empty the dishwasher, prepare other meals in advance for the week, or just treat yourself to some relaxation on the couch!
Once this is done baking, allow it to cool for a while, slice it into pieces, and then portion it out into containers. Just like that, you have breakfasts already made for the week! No more excuses for skipping breakfast!
This is the perfect dish for those chilly fall or winter mornings when you want something warm but don’t have the time to make warm oats. Simply pop a slice in the microwave for a few seconds and there you have it – a nice, warm breakfast!
But don’t let what I said above fool you – you can make this at any time of the year, not just in the cooler months. This recipe is also great served cold, especially when it’s topped with some yogurt or fresh fruit. It’s such a filling and satisfying meal, thanks to all of the fiber, complex carbohydrates, and healthy fats. No matter how you choose to eat it, warm or cold, I promise that this recipe won’t disappoint!
- 3 large eggs
- 1½ cups unsweetened almond milk (or milk of choice)
- ¾ cup unsweetened applesauce (can also use mashed banana)
- 3 TBSP pure maple syrup or honey
- 1 tablespoon ground cinnamon
- 1 tablespoon ground flax seed
- 2 tablespoons chia seeds
- 1 teaspoon baking powder
- 4 cups rolled oats
- 2 apples, peeled, cored and diced
- ¼ cup slivered almonds
- Optional: ¼ cup dried cranberries
- Preheat oven to 350 F and lightly coat the inside 9x13 casserole or baking pan. Set aside.
- In a large bowl, whisk together the eggs and milk until combined. Add applesauce (or banana), maple syrup, vanilla, cinnamon, and baking powder. Stir in oats, chia, flax, and apple chunks.
- Spread mixture into prepared pan.
- Bake for 35-40 minutes, or until the top is golden and the center is no longer jiggly.
