I’m not much of a meat-eater because quite honestly, I don’t love the taste of it. I’d much rather eat some grains, veggies, or sweet potatoes (my fave!), but I’m definitely not opposed to eating meat every once in a while. Especially when it involves these tasty lamb meatballs!
Now since we’re already being honest, I might as well just throw this out there, as well: this was my first time ever cooking anything with lamb. I was at the store one day browsing through the meat department, thinking I was going to buy some grass-fed beef to make my parents some burgers. However, I instead stumbled upon the lamb, and ended up deciding to go with that instead.
Having never cooked lamb before, I didn’t really know what flavors or spices to add to it. Since I had already made a Moroccan-Spiced Couscous Salad for the side dish for dinner, I decided to keep the theme going and use those same spices to make some lamb meatballs. I guess I had a serious case of beginner’s luck, because these meatballs turned out amazing!
These meatballs certainly complimented the flavors of the couscous salad, and it left me feeling as if I were in Morocco, rather than rainy old Michigan. The meatballs were certainly good on the first day, but they were twice as good the next day, after the flavors really had the chance to blend together. So if you can resist the urge to eat all of these on the first day, save some for the next day – I promise that they’ll be even better!
- 1 lb. ground lamb
- 2 TBSP fresh parsley, minced (or 2 tsp. dried)
- 3 cloves garlic, minced
- 2 tsp. red wine vinegar
- 1 tsp. ground cumin
- ½ tsp. each: ground coriander, all-spice, crushed red pepper flakes, ground cinnamon
- ¼ tsp. each: ground ginger and salt
- 1 egg
- ¼ cup almond flour
- Preheat oven to 400 F. Line a baking sheet with parchment paper and set aside.
- Combine all ingredients together and mix well.
- Use a 1” cookie scoop to scoop out mixture. Roll with your hands to form a ball.
- Heat 1 TBSP oil in a large skillet over medium heat and add the meatballs. Cook until browned, flip, and then continue to cook until each side is browned.
- Place the meatballs on the parchment-lined baking sheet and bake for 5-10 minutes.
