Chocolate chip cookies made from avocado? Are you kidding? Nope! I’m completely serious when I tell you that I made chocolate chip cookies from avocado. And guess what? They were darn good!
The other night, my mom wanted me to make some cookies to bring to a co-worker at work, so I quickly whipped these babies up, and in no time at all, they were done. (Waiting forever for something to bake can be a serious buzz-kill, am I right?!)
My goal as I was making these was to make them taste/look like real cookies as much as possible, without giving any indication that they might be a “healthified” version. Well good news… my plan succeeded, and upon first bite, no one knew that they were eating a “healthy” cookie!
Now it’s very important for me to note that I’m all about eating a balanced diet, which leaves plenty of room for treats. However, I also love experimenting with “healthy” recipes or modifying existing recipes to make them a bit more nutritious. It’s all about finding a balance and making room for the foods you enjoy. Just remember… ALL foods fit into a healthy diet, including sweets and desserts!
Continuing along that line, I just want to point out that these cookies are gluten-free and dairy-free, making them a great option for people with food allergies. Plus, they are packed full of healthy fats thanks to the avocado, and they could easily be made vegan by swapping the egg for a “flax egg”. Do yourself a favor and quickly whip up a batch of these to have on hand!
- ½ cup mashed avocado
- 2 TBSP unsweetened applesauce
- 1 TBSP olive oil (or another TBSP applesauce)
- ½ cup coconut sugar
- 1 egg
- 1 TBSP maple syrup
- 1 cup cocoa powder
- 1 tsp. baking soda
- 2 tsp. cinnamon
- ½ tsp. instant coffee granules
- Optional: ⅓ cup chocolate chips
- Preheat oven to 350 F. Grease a cookie sheet or line with parchment paper.
- Combine all ingredients and mix well. Gently fold in the chocolate chips, if using.
- Use a cookie scooper to drop cookies onto baking sheet, spreading about 1 inch apart (I put about 12 cookies on one sheet).
- Bake for 10-12 minutes or until tops are set and bottoms are starting to brown.
- Remove from oven and let cool for 1 minute, then remove cookies and place on a cooling rack to cool completely.
