Banana Blueberry Snack Cake

Ingredients
  

  • ½ cup (1 stick) unsalted butter softened
  • 1 8-ounce package cream cheese softened
  • 1 cup + 2 TBSP sugar
  • ¼ cup unsweetened applesauce
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract or an extra 1 tsp. vanilla
  • 3 medium ripe bananas mashed (~1 heaping cup)
  • 2 ½ cups flour
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1 ½ cups blueberries

Instructions
 

  • Preheat oven to 350 degrees F and grease an 8x8" baking dish with non-stick spray.
  • Use an electric mixer to cream the butter, cream cheese, and sugar until soft and creamy. 
  • Add the applesauce, eggs, and extracts, and continue mixing until well-incorporated. Slowly add the dry ingredients, mix well, and then use a rubber spatula to fold in the blueberries.
  • Pour batter into greased dish and bake 65-75 minutes, or until the top is browned and a toothpick inserted into the center comes out clean.
