Banana Peanut Butter Waffles

Ingredients
  

  • 2 eggs
  • 2 ripe bananas, mashed about ¾ cup
  • 1/3 cup natural peanut butter or nut butter of choice
  • 2 TBSP maple syrup
  • 1 tsp. vanilla extract
  • 2 cups unsweetened almond milk
  • 2 cups whole-wheat flour
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon

Instructions
 

  • Preheat your waffle iron. Once hot, spray with non-stick cooking spray. 
  • In a large mixing bowl, combine the eggs, mashed banana, peanut butter, maple syrup, and vanilla. Mix well, and then slowly mix in the almond milk. 
  • Add the remaining ingredients and stir until just combined. Be careful not to over-mix! You want the batter to be a little lumpy. 
  • Pour batter into greased waffle iron and cook according to your waffle iron's instructions. 
  • Remove from the iron and serve while warm. Top with sliced banana, fresh fruit, maple syrup, peanut butter, yogurt, or whatever your heart desires.
