Banana Peanut Butter Waffles

Ingredients
  

  • 2 eggs
  • 2 ripe bananas, mashed about ¾ cup
  • 1/3 cup natural peanut butter or nut butter of choice
  • 2 TBSP maple syrup
  • 1 tsp. vanilla extract
  • 2 cups unsweetened almond milk
  • 2 cups whole-wheat flour
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon

Method
 

  1. Preheat your waffle iron. Once hot, spray with non-stick cooking spray. 
  2. In a large mixing bowl, combine the eggs, mashed banana, peanut butter, maple syrup, and vanilla. Mix well, and then slowly mix in the almond milk. 
  3. Add the remaining ingredients and stir until just combined. Be careful not to over-mix! You want the batter to be a little lumpy. 
  4. Pour batter into greased waffle iron and cook according to your waffle iron's instructions. 
  5. Remove from the iron and serve while warm. Top with sliced banana, fresh fruit, maple syrup, peanut butter, yogurt, or whatever your heart desires.
