Banana Blueberry Snack Cake

Ingredients
  

  • ½ cup (1 stick) unsalted butter softened
  • 1 8-ounce package cream cheese softened
  • 1 cup + 2 TBSP sugar
  • ¼ cup unsweetened applesauce
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract or an extra 1 tsp. vanilla
  • 3 medium ripe bananas mashed (~1 heaping cup)
  • 2 ½ cups flour
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1 ½ cups blueberries

Method
 

  1. Preheat oven to 350 degrees F and grease an 8x8" baking dish with non-stick spray.
  2. Use an electric mixer to cream the butter, cream cheese, and sugar until soft and creamy. 
  3. Add the applesauce, eggs, and extracts, and continue mixing until well-incorporated. Slowly add the dry ingredients, mix well, and then use a rubber spatula to fold in the blueberries.
  4. Pour batter into greased dish and bake 65-75 minutes, or until the top is browned and a toothpick inserted into the center comes out clean.
