Fresh Peach Salsa

Ingredients
  

  • 3-4 medium peaches peeled and diced
  • Flesh from 1 large avocado
  • 2-3 medium San Marzano or Roma tomatoes diced
  • 1/2 medium jalapeno pepper seeds removed, diced
  • Juice from 1 lime about 3 TBSP
  • 2 TBSP white onion diced
  • 3 TBSP fresh cilantro chopped
  • Salt and black pepper to taste

Method
 

  1. Prepare and chop all of the produce, and then mix everything together in a bowl.
  2. Refrigerate for at least one hour before serving.

Notes

You can use any type of tomato you'd like. Just aim for about 1 cup chopped tomato.
